Many of the most popular puddings can be made with all natural, dairy free substitutes and actually become better health foods when using chia seed in the ingredients. By removing any almond milk or other liquid ingredients they can meet paleo diet qualifications.

Fruit and Chia Pudding
Makes one small single serving.
1/4 cup (40 grams) of blueberries
1 chopped banana
2 tablespoons of chia seeds
Directions: blend all ingredients together until they are smooth and serve in a bowl or cups. Granola makes a great crunchy topping.
Any berries and fruits can be used in this simple recipe and depending on how sweet you like your pudding, you could add honey to it. Using applesauce instead of the blueberries will add a similar texture and sweetness at the the same time. The juice in the apple sauce will help the chia seeds form the gel giving it thickness. Since it becomes blended together it has the pudding like consistency and is all natural. There are a variety of simple chia pudding recipes that can be made by simply swapping out the blueberries and bananas for other fruits. The dairy based puddings like the one below can also be made by using soy, rice or almond milk instead of dairy.
Chocolate Chip (Faux Tapioca) Pudding
1/4 (40 grams) cup of chia seeds
1 cup (240 ml) of organic soy/rice milk
1 teaspoon (5 ml) of organic vanilla or 2 scraped vanilla beans
1 tablespoon (20 grams) of chopped figs
1/2 handful of organic chocolate chips
Directions: Soak the chia seeds in the soy or rice milk for 3-5 hours or over night. The chia gel with thicken the mixture to a pudding consistency. Add this to a blender with the organic vanilla or vanilla beans and the chopped figs. Blend until even. Add to a bowl or cup and sprinkle the organic chocolate chips on top.
To make a chocolate tapioca pudding, substitute the soy, almond milk for chocolate versions and instead of adding the plain chips to the top add some roasted pumpkin or vanilla chocolate chips. This recipe is a great alternative to tapioca and tastes amazing.
What is great about chia pudding is that it is a great dairy-free alternative to other puddings. It doesn’t require any milk and yet is has a similar texture due to the gel created while providing all of the benefits of chia seeds.
